Lentil Salad
Lentils are very much enjoyed in Greece and are often combined with pasta or rice or eaten cold in simple summer salads. Enjoy this classic Greek lentil salad recipe.

Ingredients:
1 1/2 cups Puy lentils
2 bay leaves
8 tbsp olive oil
Juice of 2 oranges
Salt
Freshly ground black pepper
1 medium-sized red onion, peeled and thinly sliced
1 orange, peeled and cut into segments
Preparation:
Place the lentils, bay leaves and 2 tbsp of the olive oil in a saucepan. Cover with water and bring to a boil, then simmer for 20 minutes or until the lentils are cooked. Drain in a colander and allow to cool. Place in a serving bowl. Add the orange juice and remaining 6 tbsp of olive oil, and season with salt and pepper. Stir the mixture well and marinate for about 30 minutes in the refrigerator. Just before serving, mix in the sliced onion and orange segments.
Serves 4 to 6

Greek - Horiatiki Salata
Who would of thought that this traditional country-style salad would end up becoming one of the best loved Greek dishes? A very easy Greek recipe especially for the summer months!

Ingredients:
4 ounces feta cheese
1 cucumber
1 red/green bell pepper
5 tomatoes
1 head romaine lettuce
Black Olives - handful
1 large red onion, peeled and thinly sliced
1 tsp dried oregano
Salt
Freshly ground black pepper
Red wine vinegar
Olive oil
Preparation:
Assemble feta cheese and vegetables in a large bowl. Sprinkle with the oregano, salt and pepper. Drizzle with olive oil and vinegar and serve.
Servings: 4

Taramas is another very easy Greek recipe of a salad. The only difficult thing is to find carp roe. Greeks eat it in Kathara Devtera a lot. It is really good combined on bread while eating legumes. Some olives and white cheese and there you go!
Naturally it is pink, but I ‘ve met it brown, orange or white. Try to get it pink. Its preparation takes no more than 5 minutes (or 10).

INGREDIENTS:
100 grams of carp roe
1 cup of olive oil
3 slices of bread without crust
2 lemons (squash them to take the juice)
some warm water
PREPARATION:
Wet the bread and squeeze it dry. Blend everything except oil and lemon juice. After the first blending is over add oil and lemon juice (slowly) and continue blending. If it is too solid add some warm water to make it viscous. It must be like a cream (like yogurt) but with other colour. Add any salt if you like, after you taste it.

Tzatziki is one of the most famous Greek salad recipes. Based on yogurt, it can make a good couple with bread, while eating legumes. But not only this! Greeks dive the barbeque meat in tzatziki, not in unhealthy ketchup and mayonnaise. You can try it in your next barbeque party and leave the guests astonished. Its coolness will make a really good combination with hot meat. Taking some bread dives into tzatziki is a good way to drive your hunger away, bachelors! Apart from meat and legumes, it can also be combined with other foods. Try it to impress your girlfriends and boyfriends! But not exaggerate with the garlic!
To make tzatziki, which is not an actual food, but something that boosts the taste of the food, you need:
1/2 kilo drained Yogurt
1 cucumber (or if it’s big enough the 3/4 of it)
5 soup-spoons of oil (preferably olive oil)
2 soup-spoons of vinegar (if you don’t have vinegar, it’s not a big crime to skip it)
1 or 2 cloves of garlic
Smash the garlic and cut the cucumber into small pieces (cubes).
Then put everything in a bowl and stir up until only yogurt and cucumber pieces can be seen. Preserve in the fridge. It’s that simple!! If you want you can add only one smashed (always smashed!) clove of garlic. Then taste it and add the second one if you want it “heavier”. You can add 3 or 4 as well. Do not overdo it!
